1 stalk celery, halved lengthwise and cut into 1/4 inch pieces
½ apple, peeled, cored and cut into ¼ inch pieces
2 heaping Tbls mayonnaise
2 Tbls freshly chopped basil leaves
3 tsp fresh lemon juice
Salt and freshly ground black pepper
4 slices multigrain or sourdough bread
Place the drained tuna in a medium size bowl and lightly fork into chunks.
Add chopped celery, apples, basil and lemon juice to the tuna.
Mix in mayonnaise and stir to combine. Season with salt and pepper to taste.
Toast the bread.
Divide the tuna mixture in two and make the sandwich.
