Tuna Sandwich with Basil, Lemon, Apple and Celery

  • 1 jar Tonnino tuna packed in olive oil, drained
  • 1 stalk celery, halved lengthwise and cut into 1/4 inch pieces
  • ½ apple, peeled, cored and cut into ¼ inch pieces
  • 2 heaping Tbls mayonnaise
  • 2 Tbls freshly chopped basil leaves
  • 3 tsp fresh lemon juice
  • Salt and freshly ground black pepper
  • 4 slices multigrain or sourdough bread


  • Place the drained tuna in a medium size bowl and lightly fork into chunks.
  • Add chopped celery, apples, basil and lemon juice to the tuna.
  • Mix in mayonnaise and stir to combine. Season with salt and pepper to taste.
  • Toast the bread.
  • Divide the tuna mixture in two and make the sandwich.
